Peach-Pear-Mango Birthday Cake

A Peach-Pear-Mango Cake.  That is what my son requested for his birthday. Hmmm.  I am rather creative, and my kids sure keep me working to be more so.... they give me ideas of a cake they want for their birthday.... and I need to come up with a way to make it happen. :) Sometimes it is rather challenging. 

This is what I came up with. Actually, last year, the same son wanted a Peach-Pear Cake. When I make one of these special cakes, I don't write down a recipe, but I used a similar idea for this year. Basically, I started with a yellow cake recipe, used  bit less sugar, and added about 2-3 cups of cut up canned peaches, pears, and mangoes.  It turned out really moist and was wonderful with vanilla ice cream. :)

Well this son also has been enjoying drawing Minions from Despicable Me 2. We are not in favor of many things on the movie, but he has enjoyed the little yellow guys, so I decided to use it for the cake. The trouble is that I was really rushed.... after a very busy morning and with Adrenal issues, I HAD to sleep for a bit in the afternoon, but I slept for 2 hours and didn't get up until 4:00. That was not good when we were planning to eat at 6 pm and I hadn't started the meal OR THE CAKE yet. Not good!

So this was rushed, but thankfully it turned out well. For his birthday meal, he chose homemade pizza pockets, so I rushed to get the bread mixed and rising, then mixed up the cake... and put it into the oven. Back to making the pizza pocket filling and forming the pizza pockets, (Planning to post the Pizza Pocket recipe on my blog soon) then while they were rising, back to the cake - mixing frosting, etc. I waited as long as I could to frost the cake since I really didn't want to frost a hot cake.... it was still quite warm, but not hot.

I've never made a minion, but thought I could give it a try.....
I was looking at a picture and doing the best I could..... and rushing very much. :)

 Well..... he looks like one of those yellow guys -  Just needed to hurry and finish decorating the rest of the cake while the pizza pockets were baking......
 The kids were pleased....  and it all turned out to be a nice birthday celebration. I prefer having everything organized a bit better, but this day was just too busy.... and my energy was too low.... and God allowed it to still be special for our son. What a blessing. :)









The best part, though, was the taste! Everyone loved the moist sweet fruit flavor.... with ice cream, of course. :)














       Peach-Pear-Mango Cake
1/2 c. butter, softened   
1 1/2 c. sugar                                    -Cream together
........................................
1 1/2 tsp. vanilla
2 eggs                                               -  Add, to butter mixture and Beat
........................................
1 1/4 c. milk                              -Alternate adding milk and flour/baking powder and mixing until
2 3/4 c flour                                   all is used. You may need a little extra flour if batter is too runny,
2 1/2 tsp baking powder                depending on how much liquid was with the fruit.
........................................
1 can peaches, drained
1 can pears, drained
1 can mango, drained             - Cut all into pieces and add to cake batter, stir gently. You may need
                                                    to add a bit more flour if batter is a bit soupy, depending on how  much liquid was with the fruit. Again, stir gently.
Pour into greased 9" x 13" pan or 2 - 8" or 9" round pans.  Bake at 375 degrees for 30-35 minutes.
Cool when done. Frost with cream cheese frosting. 

         Frosting
1 - 8 oz package cream cheese, softened
1-2 tbsp butter, softened                             - cream all together
....................................
1 tsp vanilla                                         - add, stir in
1/4 c milk                                             - add some of the milk, then some powdered sugar, keep
1-2 c powdered sugar                                mixing together until right consistency.... may need
pinch of salt                                               more or less milk and pwd sugar than recipe says....
