How to Encourage Elderly Parents...


Parents and grandparents are precious... even when they are elderly and unable to do as much as they have previously done. They need more encouragement, especially in these uncertain and frightening times. Sometimes, something simple can encourage ...

 My parents have experienced difficulty as problems of  current times cut them off from visiting friends and family, decreased their outings, made them question their purpose in life, caused them fear and led to much loneliness. 

I wanted to help them, but was unsure how to do that. I was already sending cards, pictures and made many phone calls. Still, I could tell they needed more and were not flourishing, but were sad and "down".  They were very vulnerable, and listening to the "news" only increased the unpleasant emotions they were trying to process.

Their health was deteriorating bit by bit. Mom hasn't been able to read much for quite a while now, except for little bits of large writing. Dad puzzled me as he developed attitudes contrary to what he had always had and I was concerned. It took much digging in my talks with him to uncover that he had become unable to read his Bible as the words moved around and he couldn't understand what he was reading. This was making them very vulnerable to some questionable tv preachers and I was concerned.







 I wasn't sure how to help from afar, but they definitely needed some encouragement fast... and often. It seemed they were experiencing fear in several areas, like so many in our uncertain world.

I had the idea that if I could send some reminders of what is important in life, along with the cards and mail, they might enjoy reading those things in the days until I sent another card.


 I have a large collection of 3" x 5" cards I have written out for my prayer reminders and go through them most days. I have interspersed those prayer cards of thanksgiving, praise, needs of friends, family and others and many other prayer needs...  with verses I collect as I read my Bible daily. It is amazing how God will use Scripture, even those I know well, to encourage me as I read through some of them each day. It has been a blessing and has increased and improved my prayer life.




I thought that a similar idea could help Mom and Dad, so started making cards for them.


At first I wrote a few cards with Scripture, simple prayers and a few Remember when....? cards. Since Dad was having so much trouble reading and seemed so uncertain, timid, unsettled, angry and quite unlike normal for him, I used bigger cards... 4" x 6". I wrote with a fine point permanent marker on the cards and each of the three categories had a different color and I wrote large letters so they could read them easily.

That first group I sent to them was urgently done as I could tell they needed something... fast. I probably sent about 20 cards total that first time and it took quite a long time to do them. Several days later, Dad thanked me for them, but we didn't really talk about them. 





I kept sending a few cards most weeks and gradually added other categories. I give God the credit for giving me these ideas and I wanted to share this with you as it may also help your loved ones. 

Eventually, I added Songs, Quotes, Did you know...?, Remember when... ? cards and still continued the original categories also. I numbered the cards in each category and keep track of how many of each I have sent, so I know what to number the new ones I make. 

Originally, I thought they would put them into categories and keep them that way, but I think they are keeping them all mixed in without being in order and it is working well for them.











Once in a while, Dad and Mom would mention thanks for the cards and one day, Dad said that they read through them several times a day every day and they really liked them. As I added the newer categories, he seemed to come "alive" again and the stress and panic diminished. I wanted to remind them of happier days, of good memories, of things they could be thankful for... and it worked.











Dad will sometimes comment now on the cards of  things he had forgotten or things he can't remember at all and we talk about them. He laughs more again. No, it hasn't been "magic" and can't take care of all of the needs, but this has been a blessing to them and I am so thankful. 









The riddles are simple and silly, but I knew my mom would probably know some of them which could give her some confidence and interest in life. I haven't sent many of them, but it was early on when I was searching desperately for something to help them when I wanted to add another category.
























The prayers were simple and designed to help them be thankful and change from focusing on the negative. I also encouraged them to stop watching the "news".

I have a friend who detests hand-written cards and notes and she does everything on the computer and wants it to look "better".  I do both and for these cards, I felt the personal connection was important and would touch them more to see that a person had written them, especially since we could not be together.

Sometimes I do beautifully hand-written cards, but I knew it would be easy to be so conscious of "perfection" that it would take longer and these were needed immediately. My life is so busy, yet this was an urgent need and I felt it was imperative to do it quickly and regularly, so these are not "pretty", but much love is sent through them and it is easier to do a few cards to add to a note I am sending to them, so I do it quite regularly.

The Scripture cards bring back to their minds familiar words from the Bible. The prayers help them direct their thoughts. The songs are simple and many are children's songs from their childhood which draws them back to happier times away from covid problems.






The Did you know... ? category came from when I taught homeschool...  we wrote a family newsletter and for a while I required each child to submit a Did you know...? article each week. I told them to find a fact and put it in the form of Did you know.... ? The kids did NOT enjoy doing those articles, though they enjoyed learning new facts. They LOVED hearing and reading the facts from siblings and Mom. It was a fun part of our newsletter. I know my parents enjoy bits of trivia also and knew these would be interesting to them.

The cards are not as desperately needed now as they were at the beginning, but I get the feeling they are still very important, even though Dad has encouraged me that I do not have to take the time to do it. I am thankful to see the benefits from this simple exercise.

So far, I have sent 27 Scripture cards, 16 Prayer cards, 18 Remember when... ? cards, 8 Song cards,
2 Riddle cards, 7 Quote cards and 4 Did you know... ?  A total of 82 cards, so far. Yes, it is time to send more and I will continue to send a few at a time. Maybe I will add more categories sometime.


This is my mom and dad a few years ago. I am thankful for them and they need more help, so I am helping them in the way I can. Thankfully a brother and sister-in-law are closer and can help them in other ways.

Our parents, grandparents, older neighbors and family members can benefit from our thoughtfulness. They are worth the effort and though this is a little thing, it can be used mightily by our wonderful Lord.



This is a time of great vulnerability and fear for many and our elderly suffer much. What a blessing it is to minister to them in little ways and encourage. This idea would be nice for elderly parents and relatives, but also for elderly church friends, neighbors, former co-workers and more. The ministry of encouragement is many times neglected, but is so important.

A similar idea could even work for a troubled teen, a tired mom, a grouchy neighbor... or anyone who needs encouragement... and actually, don't we ALL enjoy being encouraged?

Book Review ... Biblical Minimalism



Today, I am promoting a new book, called Biblical Minimalism, by Cheryl Smith.

In the book, my friend, Cheryl is very transparent about the journey God has taken her and her family on in reducing the material things they own. She is honest about the struggles of giving up things, yet also points out the great rewards of doing so. Rewards like having more time, energy and joy since her family is no longer weighed down by so many things to care for.

Cheryl writes in a conversational style, somewhat like you are sitting and chatting with her. Parts of the book may "step on toes" as we can give excuses of why we can't do this or that, but even those areas can lead us to think and evaluate. She shares related Scriptures and principles as she goes through the book. It is a book worth reading!

Mommy's Christmas "Store"


Mommy's Christmas "Store" was a popular thing in our home for many years. Recently my adult girls reminded me of the "store" and talked fondly of their memories of it. One of them said, "Mom, you need to write a blog post about it!"






The items varied from year to year... and the prices were low so that each child could buy gifts for their siblings and parents. No, they were not allowed to buy things for themselves at the "store". 





Little toys, crayons, pencils, little notebooks, simple jewelry and more were put into the store. 

We banned "wish books" from our home - those Sears or Penney's catalogues that had such enticing pictures of wonderful treasures in them. Those books of temptation to reject what God had already blessed us with in favor of something "new". After hearing the kids say things like "WOW! That bike is lots better than mine." "I want that doll."and other comments, we also did away with the ads from stores like Walmart and others for several years.  I hate the materialism in our culture and especially at Christmas and wanted our kids to enjoy giving and to appreciate what they had, not lust for more. 


We tried to keep things rather simple and the store helped us do that. This was especially helpful as we traveled so much for surgeries and it would have been very difficult to take 6 kids shopping at regular stores where they couldn't afford things anyway. Neither could we in many years. 






Just pieces of paper with prices. Very simple.





The kids LOVED this! I asked some of the guys if they remembered the Christmas Store and they did and loved it. One son asked if we would be having the Christmas Store this year... and he grinned since all of our "kids" are now adults. I laughed and said no.

 I would set things out in our master bedroom on the bed with the door shut, arranging things so they could shop. The anticipation of what would be in the store each year was high as was the excitement of being able to choose something for everyone. The line would form outside the door and one child at a time was allowed to shop. 

They would debate over what to get for each person and how much to spend of their money so they could get the best gifts for each person. There was much excitement over all of this. After they had chosen all of their gifts, the gifts were put into a bag and they then hurried past the other kids still waiting outside the door and took the gifts to a place where they could wrap each one.

One daughter said it was hard to wait outside that door for her turn. The excitement was high. I always made sure there was enough for each child to choose from. The Christmas Store was open for a little while on one day sometime before Christmas and then not again until the next year so it was a much anticipated time. 





1 cent items seems silly, but when little, they had very little money. I would give jobs for them to earn money and they loved shopping and lingering over various items to be sure to get just the right thing for those they were shopping for.







These are not actual items we used for our stores as I didn't take any pictures of them. These are items that "could have" been in our store and are set up to give you an idea of what our store was like.  One son reminded me that they rarely got candy and that wasn't usually in the store. I did put Smarties in the 1 cent section a couple of different years as they weren't as sweet, there were several in a roll and the kids loved them.




I shopped throughout the year for small items the kids would like. Some items were used for the various trips we took for medical reasons for one son.  Tips For Traveling With Children

Other items were saved for the Christmas Store. Most items were purchased at garage sales where I find many amazing deals and I pray about finding what we need.  My Garage Sale Prayer List






I tried to have a bit of a variety. Sometimes I saved out certain items so that one child could be given something they had not seen in the store. 





50 cents was about the limit for the store. By the way, I didn't make any money on the store and usually I lost money, but it was a precious part of teaching our kids to love to give.





Wonderful family memories do not have to cost a lot and I have been surprised at how something simple like this that was done more as a quick fix out of necessity has become so special and precious to our family. 

I hope you are able to build sweet memories this year whether for Christmas or not. Our kids are like sponges and they absorb so much more than we realize most of the time. I love being aware of that and trying to deliberately help them learn while also having fun.

Swamp Pie - The updated version....




Swamp Pie.... No, it doesn't sound very appetizing, but it is something that has become special to my family. There was the original Swamp Pie which is how it all started, but I decided to do an updated version and we all agree it tastes even better than the original, though the original was good too. The updated version of Swamp Pie adds just a bit more richness and flavor to balance out the sweetness and we think it is a big improvement, although my family likes both. We do not have Swamp Pie often, but every once in a while someone says, "Remember when you used to make Swamp Pie?" and we decide to have it again. The most recent time was several months ago and as a bit of fun we decided to make it since all of the family would be together for the meal. Our oldest son brought the girl who is now his wife. I was a bit concerned that she would think we are really strange because of having a dessert like that, especially with the name, but we all laughed about the story of the Swamp Pie and enjoyed our time.

Birthdays at our house are simple, but special. The birthday person gets to choose the meal, the dessert and the activity.  I laughed when my new daughter in law chose Swamp Pie for her birthday and we look forward to celebrating that birthday with her.



The new version of Swamp Pie has a graham cracker crust then I added a special cream cheese layer before putting the Pistachio Pudding on it. Then topped it off with frozen whipped topping. These are not huge changes, but they sure make the dessert even better. So, I think Swamp Pie will be a part of our family for a very long time.   :)

                              Swamp Pie- The updated version.....




               This "pie" is very easy to make and doesn't take long either. Great for any age.

                             2 packs graham crackers(of the packs inside a box)    Crush them
                             1/4 cup sugar
                             2/3 cup melted butter
    Mix together, pat into greased 9"x 13" or 10" x 15" pan. Bake at 350 degrees for 10 minutes.  Cool.


                              2-8oz packages of cream cheese, softened
                              1/2 cup powdered sugar....................Mix cream cheese and sugar well w/ mixer
                              4 oz frozen whipped topping, thawed............... Fold whipped topping in gently and spread over cooled crust. I can't always wait until it is fulling cooled and that works also.  :) 


                              2-3.4 oz packages Pistachio Pudding
                              4 cups milk
   Whisk or beat for 2 minutes, then pour over cream cheese layer.


                               4 oz frozen whipped topping, thawed 
                                     Spread over pudding. Chill then serve.

   Foods like this form the memories which tie our family together and memories of past fun are enjoyed again as we have a fun treat. I have learned, though, to be careful to develop a name for the desserts I make up because otherwise the kids will name them. (sigh).  If I had named this dessert, I would never have chosen "Swamp Pie", but now it seems to fit... and it is fun.

"Breakfast on the Go" Muffins #2 'Mostly Savory'






























I have a large family and work times vary, so breakfasts are hurried and eaten individually, for the most part. Not everyone gets up or leaves at the same times. l have been trying to create some healthier and quick muffins that will fill my guys up and help them to not skip breakfast because of lack of time to fix something. Of course, the girls and I will enjoy them too, but in lesser amounts. :)

My first "Breakfast on the Go" Muffin was a little sweet and my family loved it. You can read about it and find the recipe here:

This muffin isn't sweet, it is savory. It is packed with meat, cheese, seeds, veggies and more. This one passed the family test also. 

For the first "Breakfast on the Go" Muffin, we mixed up a basic muffin batter and added the rest of the ingredients. For this muffin, we put ALL of the ingredients in and mixed it up at the end! Not the normal way to do it, but it worked.... so either way will work.  :) 















I made 4 batches of the recipe I have in this post. Like I said, I have a big family and I like to have some muffins in the freezer, so I made a big amount of them.

I put everything in at the same time and just mixed it that way. It simplified making the muffins. It was a bit challenging to stir in because I made such a large batch, but it worked fine.






The batter is thick and chunky and it is easy to spoon it into the muffin cups.












I feel guilty sharing this, but I will anyway. We sprayed the bottom of the muffin cups to keep them from sticking. I don't like doing that, but it does help the muffin papers to come off the muffin quite easily.









A couple of years ago, I found these brown baking cups at a garage sale. There are 500 muffin cups in a box! They were $2.50 each box. I went ahead and bought 3 of them, joking about it being a lifetime supply for me.

 Well, we went through 101 of them today! What a blessing that special deal has been to me.  :)  Special deals like that come rather seldom, which is why I bought 3 of them. I sure am glad I did now. 






A fork works well to take the hot muffins from the pan to put them on cooling racks.















The cranberries are rather tart in here, but we liked them.

TIP-Buy extra bags of fresh cranberries at the end of the Thanksgiving season and keep them in the freezer. They are easy to pull out for recipes like this. Sometimes, they even mark the price down, although I have found that to be rare.










Like I said, I made 101 muffins today and here are most of them. There were several eaten for "testing purposes" :)   and also for lunch since I didn't make any with all of the other cooking and baking going on today. It was a very busy Saturday.

We are in "birthday season" where we have 4 family birthdays in a little over 2 weeks! I am quite busy with school, birthday cakes and gifts, regular household and family responsibilities and more, and we just didn't get lunch made. Everyone made it until supper though, with a muffin for a snack. :)

      "Breakfast on the Go" Muffins #2   'Mostly Savory'


2 cups flour
1/4 cup sugar
2 Tablespoons baking powder
1/2 teaspoon salt
1 egg, beaten
1 cup milk
1/4 cup melted butter

1 cup diced onion
3/4 cup diced green pepper
1 cup shredded carrots
1/2 cup Chicken Bits   (Recipe here:  How to Make CHICKEN BITS! ) 
                            You can also used cut up chicken... or bacon bits.
1/4 cup sunflower seeds
1/4 cup millet seed
1/8 cup chia seeds
1/4 cup flax seed meal (flax seeds can be ground in a coffee grinder)
1 1/4 cup cranberries (can use frozen or soak dried ones in hot water for 15 min to plump up, drain
                              water and use the berries
1/2 cup sour cream
1/4 teaspoon dill weed
1/4 teaspoon dill seed
1/2 teaspoon parsley
1/2 teaspoon tumeric
1/2 cup shredded sharp cheddar cheese
                  ...........................................Stir all together gently, but thoroughly,  in a large bowl.
                                                            Spoon batter into greased muffin cups. Makes 2 dozen muffins

                                                             Bake at 425 degrees for 25 minutes.
                                                             Remove from muffin pans and cool on wire racks.

                                                 These store well in a zipper freezer bag.

       I know there are a lot of ingredients here... my purpose was to make a healthier and filling muffin that was different from the first "Breakfast on the Go" Muffin. I liked having a lot of veggies and seeds in this. What started as a recipe to make 1 dozen muffins became one that makes 2 dozen!!  :)

I am so glad to have these "Breakfast on the Go" #2 - Mostly Savory' muffins in the freezer... and I need to make more of the Breakfast on the Go Muffins - 'A Little Sweet' to put in there also. I hope to get ahead on some of these, so that breakfasts will be easier for a while.  :)

5 More Fruit and Herb Waters
















 We are sure enjoying the Fruit and Herb Waters we have been making lately. The last post was:

 After trying these 4 fruit and herb waters... and enjoying them... I kept experimenting and came up with 5 more. Here are the five.............








 Peach, Ginger and Basil Water....  We really enjoyed this one and they loved eating the peaches out of the drink after it was done also. 































 Grapefruit, Tumeric and Dill Water............ This one was loved by several in the family. Though I loved the smell of this water, it was a bit strong for one of our daughters and for me, but it was good. My husband LOVED this one. I was glad he did since the tumeric in it (those pieces that look like carrot slices) are great for inflammation and he is needing that for his knee.

I did like the dill.... I love dill and eat it raw.... and love the young seeds raw also, so I plan to try dill in another water mix to find one that I like better.  🙂
































 Kiwi, Ginger and Basil.... this one tasted good, but we found it is better not to let this one sit as long. It tastes better when used soon.

































 Lemon and Lavender.....  I am not fond of the taste lavender, so was a bit skeptical on this one, but I have fresh lavender and wanted to try it... and it sounded good with lemon. This was really good... such a fresh taste and the lavender was light, not heavy. We all really liked this one. If you love the taste of lavender already, you could add a lot more of it. 

































 Cherry and Thyme.... this was a last minute idea.... I had found cherries on sale and they are a pretty color and loved by the family, so I decided to try it. I haven't used thyme yet for the waters, so I put thyme with it. It was good, but next time I would put more cherries in it. My husband loved this one too.

I think he liked most of the waters and loved a lot of them. I am so glad I can make these for him... he has a bit of an aversion to drinking a lot of plain water and he is trying to stay away from sugary drinks.



































I really do like the fruit and herb waters. I like that we can have water with flavor sometimes... (this is REALLY big to my husband!)... and that we can get extra nutrition.
