WHAT Is Swamp Pie???





 Swamp Pie?   WHAT?????   What is Swamp Pie?      Who would ever want to eat Swamp Pie?  Ewww! The name alone conjures up images of things no one would want in a pie. Hmmm.....

Well, swamp pie came about because years ago, I wanted to come up with a quick dessert for my family and needed to use what was in my cupboard because I had no extra money for a treat and couldn't get to the store. I don't remember the occasion... maybe just to encourage my husband, but I knew we wanted a treat for the meal.

The cupboards had food, but not much in the way of extras and money was quite tight, so I wasn't sure what I would find... we were out of so many things. I did find a couple of things that someone had given to me, that hadn't been used yet....  so decided I could make a quick and easy dessert... and I knew the kids would like it and I hoped my husband would too. My many children were quite young at the time and rather excited about the strange looking pie.

My family loved the treat and the kids kept asking what it was called. I told them it didn't have a name. That bothered them and they promptly dubbed it Swamp Pie, amid many giggles. The name stuck... and the name couldn't be changed after that, though I admit that I tried. 🙂  It became one of our funny family stories.




Those 2 ingredients? ....................... A graham cracker crust and a box of pistachio pudding mix.
















We made swamp pie a few times after that first time and the kids loved it. One child even chose that for their birthday "cake" a couple of years. I haven't made it for a long time and had forgotten all about Swamp Pie until recently and decided to make it as a treat for my family.

 Our oldest son, who lives on his own, was home and we talked about Swamp Pie because I was planning to make it the next week. He was on his phone and not paying attention to the conversation, but when he heard the words, Swamp Pie, he perked up and asked "What? What is Swamp Pie?" He said it sounded familiar and he knew he should know, but couldn't remember. It was obvious that the memory was a pleasant one.... and we made sure we would have it when he could be here.




When I made Swamp Pie the first time, I just mixed the pudding as the box said and dumped it in and chilled it. It was a bit messy, which added to the appeal for the kids.

When I made it this time, I lessened the amount of milk I put in the pudding and it set up better. Either way, works fine.














This time, I made 2 pies for my family of big eaters... and they were enjoyed. We laughed about the silly name and how it seemed so intriguing and daring to them when they named the pie years ago.

What a fun memory.

                                      SWAMP PIE!
                                             A super simple recipe and a tasty treat.


        1 ready made graham cracker pie crust

        2 boxes of Pistachio Pudding
        2-3 cups of milk............................. Whisk pudding mix and milk until thickened
                                                                 Pour into pie crust and chill.
                                                                 Serve and enjoy!

That's it... it really is super simple.... and yet has a fun name. It was enjoyable to bring that memory back to our family again. A small thing, yet those small things bind us together... What a blessing. I also have to admit that Swamp Pie does sound more interesting than Pistachio Pie, although I'm sure some would argue the point! I never would have chosen such a name, but now it fits. Either way, we sure enjoyed it!

Simple Birthday Treasure Hunt




In our home, we celebrate birthdays... but we do not have huge celebrations... and we do not spend a lot of money on our celebrating. We do a few simple things that mean something.... and this daughter LOVES having a birthday treasure hunt. :)








 It isn't elaborate...  I just use some small papers - maybe 3" x 3"... and I write Happy Birthday on them...  I use various markers and lettering... maybe some stickers or other messages.



The paper is usually pink because... she LOVES pink! :)

I used to use yellow post-it notes so we could stick them to the walls, mirrors and other places.  Since we have to hide them multiple times, the "sticky" wore off too quickly... now I use regular paper and cut it up... then use tape... just one small piece on the top. Easy.  :)

I like to have these all done and in place before she gets up in the morning... and she loves hunting for these notes.  This year, I made 36 of them... and I think that is about what we did last year.

I started this many years ago, with just a couple of notes.. on the bathroom mirror or refrigerator door. It was so well-received that I kept adding them until I am doing 36. Why 36? Well, because I pulled out 3 sheets and cut then into 12 each... not because I planned that, but because that is what I grabbed.  :)  I was in a rush to get this done before she got up and I was glad for my husband's help as he wrote a few of them and hid many of them.

 These are such a big deal to her...and the notes from last year have remained on her bedroom wall ALL YEAR long and will be removed so this year's notes can go up. :)

I thought that this year, she may be too old for this, so I wasn't sure if to do it or not... I'm glad we did as she still LOVES it and we ended up hiding the notes 5 or 6 times.  The whole family got in on hiding them.


She had a place on the dining room wall where she collected them and kept counting them and going to look for more..... 

A few times, her brothers took a few from the wall... and hid them again before she was done...   :) 


These were hidden in many rooms... a few even made it outside.


We have had to get more creative in hiding these... I have always put them where at least a bit of the note was showing, without totally obscuring it, but this year, her brothers challenged her more... they totally hid them... in cupboards, under pictures and more. She loved it. 

I am so thankful that all of the family gets involved in such a simple little game...  a game that goes on throughout a day or two around her birthday. It isn't an "official" party....  it is just loving her and having fun with her.

She had trouble finding a couple of them... but she kept looking... sometimes I would tell her there was still one in a certain room.

Her dad wrote a few of the notes... and of course, he helped to hide them.  :)



I think we will probably continue our simple birthday treasure hunt... at least for her.... until she tires of it, which may be a few more years yet.

We are building memories...  and that is quite special.  :)  I am so glad we have never done elaborate or expensive parties...  and I am glad our kids have learned to enjoy these simple birthday fun times.

We ATE The Hammered Dulcimer!!!


WHAT?  We ATE the hammered dulcimer????  Could that be true? How would we eat the dulcimer? With ketchup? Mustard? Maple Syrup? Hmmm.....

You see... a few years ago, we heard a man playing the hammered dulcimer and it was beautiful! What amazing talent was displayed. Since several of us in our family play musical instruments... piano or harp, especially, my husband said that if he learned to play something, he would like to play the hammered dulcimer.

So, we started to hunt for one on Craigslist... I watched for months... and finally we found one... almost an hour away from our home.    We went to look at it and ended up buying it....  my husband started practicing.  After some research, I made a "cheat sheet" to lay under the strings on the dulcimer and show what the notes were and to make it easier to play, since the dulcimer is not set up the same as a piano.

He practiced and started to play a song or two in a simple manner and it was surprising how well he did. I was sure that with practice, he would do very well. He seemed to enjoy playing and he had hoped to keep practicing, but life got busier and he played less and less. Finally, after a couple of years, we decided to sell it since he never used it at all. My daughter and I used it a little, but our main interests are piano and harp, so we didn't want to keep it for us.


 We posted it on Craigslist and after a few months, it sold...  and it was so nice to take it off of the cabinet it had sat on for so long. Since it wasn't ever used any more, it had become a nuisance to just take up the space on that cabinet... after all, a hammered dulcimer is rather large and a bit oddly shaped.

A few days after we sold the dulcimer, my husband was headed to the store for me as we had unexpected company coming, but I was out of grocery money. Since we had company coming, it was necessary(we would have made do with something else, but having the extra from the dulcimer helped) to get something for a company meal and he took some of the money from the dulcimer, to buy those groceries (no, he didn't spend it all). I wrote about that trip and in that post, I said I would explain at a later time about where I got the money for that shopping trip- I am doing that here... The original post is :

What a blessing it was to have the money from that dulcimer for groceries. Prices have gone up quite a bit on groceries and I have been having a hard time buying what we needed, so selling the dulcimer eased our budget a little.

In the past, we have "eaten" a china cabinet and a few other items. :)  No, we didn't have to chew the wood...  or get splinters in our tongues, and we didn't use ketchup, mustard or maple syrup, but still... we "ate" the hammered dulcimer and the china cabinet.... and more. The item had been converted to cash... and the cash used to buy food, which we ate. :)  There have been times when money was especially tight and we would look through the house to see what we could sell to bring in money to pay a bill or to buy groceries. It has been a while since we did that, but it still works.

Years ago, when our #2 son was small and had so many medical problems, it was a regular practice to go through the house and sell something to buy groceries... we just didn't have any money and the supplies needed for our son's care were very expensive. God provided in different ways... and one way He provided was by using those things we had in our home, but could do without. We would sell something and pay a bill... or buy groceries.

If money is tight for you, maybe taking a walk through your home and looking for something that is unused could be beneficial. Maybe it is a china cabinet... or an old unused toy box... or a baseball card collection (yes, my husband sold his during that time years ago)... maybe some jewelry... an extra car... a stereo... computer..... cell phone.... kitchen items.... other things.  God does meet our needs... and sometimes He already has... we just need to let go of something.  Is there anything odd that you and your family have "eaten"?  I would love to hear about it in the comments. :)  Thank you for visiting.

Wonderfully Easy Peanut Butter Bars!

These are pretty wonderful peanut butter bars... we have been enjoying them. You see... we like peanut butter cups, but they tend to be rather sickening sweet... so I have taken a recipe and changed it to reduce the sweetness. They are still sweet... but not overly so.




 I wanted LOTS of peanut butter flavor...and not as much sweetness, so I increased the peanut butter, decreased the sugar and more. The result is really good. :)

They are so simple also... just put the graham cracker crumbs and peanut butter in the bowl.....

Add powdered sugar and melted butter and mix it all up.

I made these to put on Christmas plates we took to neighbors this year. One neighbor wanted the recipe.... BUT I didn't really have one since I tweaked here and there.  So, I told her I would make them again and actually measure. I'm not all that good at measuring usually... you know... a little of this and a little of that... :)
It's  that easy.... 

So I did... I made another 9" x 13" pan.... and we gave some to other neighbors... and my family ate "some" and the bars were all gone. The kids suggested that I should make another pan... and I did because we were having company... and the bars were all gone. The kids kept encouraging me to "test the recipe again".... and of course, the bars were eaten up quickly. :)
 Press it into a lightly greased 9" x 13" pan.

It became a joke.... see, I wanted to send a few of the bars to my neighbor along with the recipe, but each time, the bars were gone too fast or the neighbors weren't home when the bars were ready. The one day, I made a little plate of the bars right away after the bars were done. They were on a plate and wrapped up...ready to go, but I didn't have the recipe written out yet.... well, my husband got home from work... and got into the plate of bars!!! *sigh* The whole family loves these. :)

Pour melted chocolate over and spread it over the peanut butter layer.  They can be left plain like this... or add toffee bits to the top of the melted chocolate.

So far, I have made about 6 pans of these bars in the last few weeks!!!! By the way, my neighbor still hasn't gotten the bars or the recipe, so I plan to try it again. The kids are pretty glad..... and I bought more peanut butter- after all, each pan of these takes about 3/4 of a regular jar of peanut butter!!!   :)
 Chill and cut...... and enjoy.

They really are good!  This plate went to church on Sunday....  we have a potluck fellowship meal twice a month.











                          ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
                  Wonderfully Easy Peanut Butter Bars
 2 1/2 cups crushed graham crackers
  1 1/2 cups peanut butter (we like crunchy)
  1 cup butter, melted
  2 cups powdered sugar
                                          Mix  first 4 ingredients together. Press into lightly greased 9"x13" pan.
  2 cups melted chocolate chips... (semi sweet or milk chocolate or mix the two)
                                           Spread melted chocolate over the peanut butter layer. Smooth out. Add
                                   toffee chips to the melted chocolate, if desired. Chill and cut. Enjoy. :)

A Funny Story About Wonderful Oregano Oil

Oregano oil is very beneficial and has several uses. It works well as a natural antibiotic and research has shown that it can help foot and nail fungus problems, sinus infections, respiratory problems, urinary tract infections, cold sores, and more. It can also help kill parasites and infections. It can be used topically and can also be used internally.

It is very strong and can sting when taken by mouth... and it tastes... very strong. One time when I had strep, a friend suggested that I put a couple of drops in the back of my throat, so I did. I thought I was going to die! It was horrible! I choked, my throat hurt, I coughed, tears came to my eyes and it was hard to recover.  It really did help the sore throat though... although I did wonder if the cure was worse than the problem. :)

I did have to admit that it did work... and work quite quickly.... it helped me to get rid of strep which can linger quite a while, normally. I have learned to appreciate oregano oil very much... and we do use it. However, I never take it by the drops any more.

 Now, instead of taking it on my tongue or in my throat, I use an empty capsule and put a few drops in the capsule, then swallow it. I have also learned that I need to take a lot of water when I swallow this and I don't take it just before going to bed as reflux can occur.  When I do it correctly though, I find it very helpful and it is a blessing.  :)
 I do have a funny story though, about oregano oil. My family was struggling with a sore throat problem and one evening, I offered oregano oil to my husband and suggested putting it in a capsule. He motioned for my to just drop it in his mouth. Since this was his first time to take oregano oil, I said, "It will sting, do you want it in a capsule instead?" He said he would take it the "manly" way and motioned again to just put it in his mouth. I asked one more time and he still wanted me to just give it to him... so I did. He coughed and choked, and his eyes watered and he had a hard time. (I was a good wife and didn't point out that I said it would do that. :)  He said that stuff was awful, but he laughed a little bit about it and he went to bed.

A while later, Son #2 came home from late work and I told him what had happened with Dad earlier. Son #2 was sure that Dad had seriously exaggerated how bad the stuff was and figured it couldn't be "that" bad. After all, my kids are used to taking herbal drops at times and some of them taste pretty awful. Since Son #2 also had a sore throat... he said he would take some oregano oil. I asked if he wanted it in a capsule, but he said he would also take it the "manly" way. I warned him 3 times, as I had his father... finally I dropped it in his mouth... and he coughed, choked and reacted strongly.... just like his dad... and said, "That stuff is AWFUL!" I did kind of laugh with him and reminded him that I had said it would do that. :)

The next morning, as Son #1 was up very early getting ready for work and I was working in the kitchen while he ate breakfast, I told him the "funny story" from the night before.  Son #1 plays things pretty "cool" and he was sure his dad and brother had just exaggerated, since he was sure it couldn't be "that" bad. He was eating his cereal and wasn't very talkative... he was still tired... but he said he would take it since he also had a sore throat. I again gave 3 warnings and advised the capsule, but no, he was determined to do the "manly" thing and knew HE would have no problem with it.

I finally went ahead and gave him a couple of drops in his mouth... and there was no reaction. Wow, I was shocked. He just took another bite of his cereal. I did notice his eyes seemed to water a bit, but I didn't want to embarrass him, so said nothing. I have to admit I was pretty impressed that the reaction was so small... like I said, he plays things "cool". I turned my back and went to the other side of the kitchen and heard a loud sharp burp that he couldn't stop and I turned to look at him. He looked embarrassed and I realized he WAS having a bit of trouble with the oregano oil, but I didn't point it out. He finished breakfast very calmly and went to work, leaving me still impressed that he really didn't have much trouble with it. Wow, I was shocked at his pretty much "non-reaction"... I was sure it would bother him, but guessed I had been wrong.

A couple of hours later, Son #2 had to go to the same job site as Son #1 and it is nice when the guys can work together.  Son #2 called me after a bit and said that the first thing Son #1 said to him when he got there was, "I think Mom is trying to kill us!"  Apparently, it bothered him a lot more than he let on. We laughed over it... and we continue to laugh over this. Son #1 hadn't said ANYTHING to me about it... he acted like it was no big deal at all! :) Sons #3 and 4 also had sore throats and were offered oregano oil. I asked if they wanted it the "manly" way. They both had watched or heard about their dad and brothers' reactions and they both agreed that they wanted it the "SMART" way, which is in the capsule! Now, we all take it in a capsule.

One thing that was so funny about all of this story is that all 3 of the guys had 3 warnings and all of them had to prove they were tough enough to do this. I love it that they are all so similar and that they have all been able to laugh at themselves over this and that we all agreed that pride is not a good thing. :)

My Kids Played A Joke On Me....

One day recently, my kids played a joke on me.... they asked me to go to the garden to check on things....  I didn't think much about it at first.... then they suggested it again.. .and I caught on a bit.... seeing some quickly hidden smiles confirmed that SOMETHING was up... seemed they were all in on "it".  So then I was curious about what was going on....

 They directed my attention to going out to check on the watermelon. Our watermelons did GREAT to a certain point - they grew to about 3-3 1/2" in diameter and pretty much quit.... have just stayed the same, so we have given up on them, but left the vine..... So I looked.....


Then I noticed it.... it was certainly out of place.....


Here you can see the two little melons on the vine... poor little things... and then there is the great big melon.... :) 

 We all laughed....
When I tried to pick it up, this is what happened... it was just the shell - it was from the melon they had just cut up. We had just bought two melons.... they cut up one and the other was still whole...

They cleaned the debris up from the garden bed... and we laughed again. I hadn't even noticed them planning this.

They were pleased to surprise me and it was so nice to have fun together....  and we all laughed at the thought of a big melon like that coming from that spindly little vine.  Maybe someday we will have big melons... but not this year.

It was such a little thing... and took very little time .... and yet those fun little moments help to bind us together with shared memories and laughter.  I am so thankful for my family..... what a blessing they are to me.... and I want to be a blessing to them.

Strange Recipes From Old Cookbooks...

I have recently looked through an old cookbook.... old meaning that this one was from 1976.  I was looking through it casually when I started noticing some of the titles... and thought they may interest you also. :)  Maybe these aren't strange to you - maybe you make these and love them.... but they seemed "odd" to me.






Like... Beet Salad or Colorful Sauerkraut Salad.  How about Mark's "JUNK" Salad or Gumdrop Salad? In the main dish section, I saw Klumpus that calls for jaws, backbone or country ribs and Feather Dumplings. In desserts, there were recipes for Calorie Pie, Allergy Peanut Butter Cookies and Ding-A-Lings. There were recipes for Mayonnaise Cake and Coca Cola Cake and Hot Milk Cake.



The names of some of these make some sense... others, I have no idea why they are called such a name..... Why would I eat Calorie Pie? I think we all know pie has calories and sometimes we just pretend it doesn't... but at least we don't want to be reminded of it up front. It would be like naming potato chips.... Fat Potato Chips... they probably wouldn't sell very well with that name. :)

My kids would love the idea of gumdrop salad, but it seems odd... and WHAT goes into "Junk" Salad? Just for fun, I am including the exact recipe for this one.....

    Mark's "JUNK" Salad
1 can cherry pie filling                1 c. chopped nuts                          1 carton Cool Whip
red food coloring                         1 can Eagle brand milk                 
1 can pineapple chunks                1 can mandarin oranges                Mix all together.

A few more names... Graham Nut Roly Poly, Calico Salad, Rink Tum Ditty Soup, Smokestack Slaw, Chocoladamias, Dooley, Black Oil Cake, Shoe-Peg Salad, Sock It To Me Coffee Cake, Daffodil Cake, Yum Yum Cake, Chipmunk Bars.

I like cookbooks that give a bit of background for a recipe... and I would love to know what inspired the name for a lot of these. Anyway, they are fun to look at and wonder about. :)

The Call of the COOKIE!!!

The Call of the Cookie?.... Have you ever heard that call? I have.

Sometimes the smell of warm chocolate chip cookies gently calls my name and I enjoy the chewy goodness of a comfort food.

Sometimes hunger sends me hunting for something to snack on.... and cookies are just so easy to eat.

Sometimes there are no cookies made... and we need to make them... Now!. :)

 Sometimes they accompany a little tea party for one.... as a break in the day or a special moment of quietness.

Sometimes they are to be shared with friends and neighbors.... over tea or just on plates given.

Cookies come in so many flavors... of course, there is chocolate chip... but  there are also Snickerdoodles, Oatmeal Raisin, Shortbread, Butterscotch Bars, Brownies, Molasses Crinkles, and many more.

 A cup of tea goes so well with those cookies. A cup of tea sipped from a pretty cup tastes even better, for some reason. In fact, I have started carrying a china tea cup in my purse when going to a church potluck in the winter, sometimes. I just love drinking the tea... but NOT out of a styrofoam cup.







A small teapot works well for one... my girls have enjoyed bringing such a tea tray to me when I needed extra rest. The adrenal issues I suffer from require extra rest - no, they don't require cookies :) ,  but there is something special about them. :)









 These cookies were made by my 14 year old son... he likes them BIG! :)

Cookies can minster to someone... we can give cookies to show we care and are thinking of someone.... to feed people.... to encourage.... to uplift. Yes, we give breads and other baked goods too, but there is just something about homemade cookies. Yum!

Now, we want to be careful how often we heed that Call of the Cookie... or we will have other problems to deal with! :)  But once in a while, in moderation.... listening for the Call of the Cookie.... can be enjoyable.
