Quick Garden Stir-Fry

We like stir-fry, but I don't have a specific recipe for it.... especially in the summer when things are ripening in the garden.  Many different things could end up in the stir fry. :)

 Here I started out with olive oil, cooked chicken breast, and onion.
 We had three squashes(2 yellow, 1 zucchini) from the garden, so those were cut up to add....
Along with the squash, there were also just a few green beans and a pepper which were cleaned, cut up and added to the pan...


There are so many possibilities - and it is a good way to use some of the garden veggies. :)






 I also added chunk pineapple.... and many times I will put apple cider vinegar and some brown sugar... and make a sweet and sour stir fry.... there are many possibilities.


 I added chicken broth, water, some seasonings, and then thickened it with corn starch...


We served it over rice.... with herbed cheese bread on the side.  The ingredients can be many different combinations...  it is a quick and nutritious meal.

  3. Yummo! Thanks for the meal inspiration, I would never of thought to add the chicken broth and thicken it up to pour over rice... I will have to try that!
